The area that is now Cohoes was originally inhabited by the Mohawk people, who called it Ga-ha-oose, meaning "place of the falling canoes." The first European settlers arrived in the area in the early 17th century, and the city was officially incorporated in 1869.
The city was originally known as the Village of Cohoes, and was part of the Town of Watervliet. In 1848, the village was incorporated as a city, and the name was changed to Cohoes.
The city was an important industrial center during the 19th and early 20th centuries, with several mills and factories located along the Mohawk River. The city was also home to the Cohoes Music Hall, which opened in 1874 and was one of the largest theaters in the country at the time.

Cohoes is a major industrial center in the Capital District of New York State. The city is home to several large manufacturing companies, including the Cohoes Manufacturing Company, which produces textiles, and the Cohoes Paper Company, which produces paper products.
The city is also home to several retail stores, restaurants, and other businesses. The city is served by the Cohoes-Waterford Bridge, which connects the city to the Town of Waterford.

As of the 2010 census, there were 16,168 people, 6,845 households, and 4,072 families residing in the city. The population density was 3,919.3 people per square mile (1,514.2/km2). The racial makeup of the city was 87.2% White, 6.3% African American, 0.3% Native American, 1.7% Asian, 0.0% Pacific Islander, 2.2% from other races, and 2.5% from two or more races. Hispanic or Latino of any race were 8.2% of the population.
There were 6,845 households, out of which 28.2% had children under the age of 18 living with them, 38.2% were married couples living together, 16.2% had a female householder with no husband present, and 40.2% were non-families. 33.2% of all households were made up of individuals, and 13.2% had someone living alone who was 65 years of age or older. The average household size was 2.35 and the average family size was 3.00.
In the city, the population was spread out, with 23.2% under the age of 18, 8.2% from 18 to 24, 29.2% from 25 to 44, 22.7% from 45 to 64, and 16.7% who were 65 years of age or older. The median age was 38 years. For every 100 females, there were 91.2 males. For every 100 females age 18 and over, there were 87.3 males.
