The area that is now Canisteo was first settled in 1790 by a group of settlers from Connecticut. The town was originally known as "Canisteo Flats" and was part of the Town of Hornby. In 1812, the town was officially incorporated as the Town of Canisteo.
The town was named after the Canisteo River, which was named by the Seneca Indians. The name is derived from the Seneca word "Kanistio," which means "place of the valley."

Geography

Canisteo is located in the western part of Steuben County, New York. It is bordered by the towns of Hornby to the north, Greenwood to the east, and Jasper to the south. The town is located on the Canisteo River, which flows through the town from north to south.
