Elizabeth, Minnesota is a small city located in the southwestern corner of the state, in the heart of the Minnesota River Valley. Elizabeth was founded in 1856 by a group of settlers from the nearby town of Mankato. The town was named after Elizabeth, the wife of one of the settlers, and was incorporated in 1872.
