Elkhart was founded in 1873 by the Houston and Great Northern Railroad. The town was named after Elkhart, Indiana, the hometown of the railroad's president, William H. Osborn. The town was incorporated in 1876 and soon became a thriving center of commerce and industry. The town was home to several cotton gins, a sawmill, a gristmill, and a blacksmith shop.
In the early 1900s, Elkhart was a major stop on the Texas and New Orleans Railroad. The town was also home to several churches, a school, and a post office.

Elkhart is located at 31°14'25" North, 95°37'17" West (31.240278, -95.621389). According to the United States Census Bureau, the town has a total area of 1.2 square miles (3.1 km2), all of it land.

The economy of Elkhart is largely based on agriculture. The town is home to several farms and ranches, as well as a few small businesses. The town is also home to a lumber mill and a feed store.

As of the census of 2000, there were 1,845 people, 690 households, and 486 families residing in the town. The population density was 1,541.2 people per square mile (593.3/km2). There were 776 housing units at an average density of 645.2 per square mile (249.2/km2). The racial makeup of the town was 79.17% White, 17.90% African American, 0.16% Native American, 0.05% Asian, 0.05% Pacific Islander, 1.60% from other races, and 1.07% from two or more races. Hispanic or Latino of any race were 3.45% of the population.

The average household size was 2.60 and the average family size was 3.12.
